The sopressa DECO maronese, explains the butcher Tommaso Cristini, owner of Norcineria Carai “is a mixture of pork, in which the parts of the capocollo and the bacon are used, minced into large pieces with the use of a knife, in which it is also inserted the pig’s tongue; then a mix of spices, with pepper, cloves, nutmeg and cinnamon. It is bagged by hand, tied tightly. The Carai family has been producing it in this way for five generations and I am proud to continue the tradition ». The sopressa from Carai pork-butcher’s, produced according to the DECO protocol, can be eaten boiled, with herbs and spinach, surrounded by polenta, or seasoned and sliced like a classic cured meat.
